They became popular only because they offered something unique.. they were holding a USP with them. You pick any.. and each one of them has a unique offering for the visitors (though many others have tried to imitate without much success). And this is key to success. Offer your visitors something which no one else can, win their trust and do what you commit (or do not over commit) and you can, not only, attract new visitors (word of mouth spreads as good/bad as fire) but also retain them as your loyal customers. People link to them (knowingly or unknowingly), adding to their SEO value. As for the layout, any online selling company should follow a simple and user friendly website design. As long as your services, policies, rates are good, people will visit buy things from you. A flashy website with poor services, rates and policies will not survive even with attractive looking layout or months of SEO.
